Buttermilk Biscuits - Plain

You will need:

• 2 1/2 cups all purpose flour
• 2 cups buttermilk
• 1 stick butter
• 4 tsp baking powder
• 4 tsp sugar
• 2 tsp salt

Instructions:

• Preheat the oven to 450 degrees
• Mix all the dry ingredients in a big bowl
• Add the buttermilk and mix until combined, can be slightly dry but should usually still be sticky
• Melt the stick of butter and pour it into the bottom of an 8x8 or 9x9 pan
• Pour your dough on top of the melted butter and spread as best as you can
• Use a spatula to cut the dough into 9 squares
• Bake for 20-25 minutes

Buttermilk Biscuits - Blueberry Glazed

You will need:

• 2 1/2 cups all purpose flour
• 1 3/4 cups buttermilk
• 1 stick butter
• 1 tbsp baking powder
• 1/4 cup granulated sugar
• 1/2 tsp salt
• 1 1/2 cups fresh blueberries
• 1 cup powdered sugar
• 2-3 tbsp milk

Instructions:

• Preheat the oven to 450 degrees
• Melt the stick of butter and pour it into the bottom of your 9x9 or 8x8 pan
• Mix together the flour, baking powder, granulated sugar and salt
• Add the buttermilk and mix until combined, can be slightly dry but should usually still be sticky
• Gently fold in the blueberries (completely dry and then toss blueberries in a bit of flour first so they don't sink to the bottom)
• Pour the dough into your pan and spread as evenly as you can
• Use a spatula and cut the dough into 9 squares
• Bake for 25-30 minutes
• In a small bowl or cup, whisk the powdered sugar and milk together to make the glaze. I like to add vanilla extract or lemon juice, just a tiny bit of either.
• Pour glaze over the biscuits while they're still warm

My Homemade Hamburger Helper

This one's super easy!

You Will Need:

• 1 box of your choice of mac and cheese - (I like using Simply Mac but use literally whatever)
• 1 pound your choice of sausage - (I like Tennessee Pride mild)
• Garlic Powder - Optional

Instructions:

• In a pan, brown your sausage.
• In a pot, make your mac and cheese.
• Mix together! Garlic powder and other seasonings can add a little more flavor.
• For a little bit extra, you can dump the combination in a cake pan and cover it with foil. Sprinkle with any kind of shredded cheese, and bake for about 15 minutes at 350 degrees!

Crockpot Salsa Chicken and Spanish Rice

This is a two part recipe - I'll try to seperate it well! This makes a good potfull of rice and enough shredded chicken to mix in!

You Will Need (For Salsa Chicken):

• 3-4 good size chicken breasts
• 1 16oz can of your choice of salsa (I use thick and chunky)
• 1 pack of chicken taco seasoning
• Minced garlic (measure with your heart)
• 1 whole yellow onion

Instructions (For Salsa Chicken):

• Place chicken breasts in the crockpot
• Cover with chicken taco seasoning, then minced garlic
• Dice your onion then dump that in
• Dump in your jar of salsa and spread it out
• Cook on high for four hours, or low for six hours, then shred

You Will Need (For Spanish Rice):

• 6 tbsp vegetable oil
• 2 cups uncooked rice
• 2 tsp minced garlic (or measure with your heart)
• 1 tsp salt
• 1 tsp cumin
• 1 cup (16 oz) tomato sauce
• 3.5 cups (28 oz) chicken broth

Instructions (For Spanish Rice):

• Heat the vegetable oil in a large pot on medium-high heat. Add the rice and stir gently until it lightly browns.
• Add the garlic, salt, and cumin and stir until it looks golden.
• Add the chicken broth and tomato sauce, stir, and turn the heat up a bit higher.
• Bring to a boil, stir, then turn on low to simmer covered with a lid for 20 to 25 minutes.
• Fluff with a fork and stir in your salsa chicken!

Crockpot Creamy Chicken

You Will Need:

• 3-4 good size chicken breasts
• 2 16oz cans cream of chicken
• 1 packet onion soup powder
• Minced garlic (measure with your heart)

Instructions:

• Simply throw everything in the crockpot!
• If you'd like a certain order, I do 1 can of cream of chicken, the breasts, the packet of onion soup, the other can, then the minced garlic.
• Cook on low for six hours or high for five hours.
• Shred and eat over rice or pasta!

Sheetpan Sausage, Potatoes, and Feta

You Will Need:

• 1 kielbasa sausage or long sausage of your choice
• 1 package baby potatoes
• 1 package of frozen asparagus, or broccoli, or both
• 1 package feta cheese
• 1 tbsp butter
• Italian seasoning, pepper, any seasoning you want!

Instructions:

• Preheat the oven to 350 degrees
• Slice your sausage to whatever thickness you'd like. You can heat these up some in a skillet before you put them on the sheetpan or just throw them on, I've done both and been fine both ways!
• Slice your potatoes into quarters and throw them into the microwave to soften some. I do 5 minutes in an uncovered bowl.
• Toss the softened potatoes in the butter and whatever seasonings you'd like and throw them on the sheet pan.
• Dump your frozen veggies in the same container you used for the potatoes and heat them for five minutes as well. Toss in the butter/seasonings left in the bowl and add more if you'd like, then add to the sheetpan.
• Sprinkle feta cheese over the whole pan.
• Cook for 15-20 minutes. I like to cook for 15, pull out the tray and add some more feta, then cook for five more minutes.

Red Beans and Rice

Another super easy one!

You Will Need:

• 3 cups cooked rice
• 1 16oz can tomato sauce
• 1 pound ground sausage
• 1 kielbasa sausage or any long sausage of your choice
• 1 can red kidney beans
• 1 4oz can tomato paste
• Any seasonings you want!

Instructions:

• In a BIG skillet or saucepan, brown both your ground sausage and long sausage
• Add red beans, then tomato sauce, then tomato paste, then any seasonings you want. Simmer on medium-high heat for about five minutes, stirring often.
• In a big pot, add your rice, and then your saucepan mixture. Add more of your seasonings to this if you'd like, some get lost in the tomato sauce if you don't add more.

My Mom's Pizza Chili!

One of my favorite crockpot meals she makes!

You Will Need:

• 2 lbs of ground beef
• 1 bell pepper, diced
• 1 yellow or white onion, diced
• 1 15oz jar tomato sauce
• 1 8oz can tomato sauce
• 1 15oz can sliced, stewed tomatoes (Optional, she adds these, I don't)
• 1 can any beans (She uses ranch beans, I can't get those so I use red beans)
• 1 packet pepperoni, mini or regular size
• 2 tsp chili powder
• 1 1/2 tsp italian seasoning
• Minced garlic (measure with your heart)

Instructions:

• Throw everything in the crockpot! Low for six hours, or high for four hours
• Say thank you to my momma

Cheese Danishes

You Will Need:

• 8oz cream cheese, softened
• 1/4 cup granulated sugar
• 1 sheet puff pastry - Refridgerated works best, but you can use frozen if you thaw it out some
• 1 egg
• 1 tbsp water

Instructions:

• Preheat oven to 425 degrees and line a sheetpan with parchment paper
• In a bowl, beat together cream cheese and sugar until smooth
• Unroll puff pastry and roll it out to around the size of your sheetpan. Cut pastry into 8 rectangles
• Using a small knife, score smaller rectangles into the bigger ones. Leave about an inch for the edge. Don't push your knife all the way through, you just want an inprint
• Scoop cream cheese mixture into the smaller rectangles
• Mix the water and egg in a small bowl and use a pastry brush to brush it on the outer edge of the pastries
• Bake for 12-15 minutes
